Cupcakes With Smooth Chocolate Ganache
These were my dinner *lol* I had a really late lunch and was too lazy to cook dinner. Sunday’s usually the ‘cake day’.

The ingredients:
For the cupcakes:
1 stick unsalted butter (at room temperature)
3/4 cup granulated sugar
1/2 cup chocolate chips (optional)
1 1/2 cup all-purpose flour
2 large eggs
1 tsp baking powder
1/2 tsp salt
1/3 cup milk
1 tsp vanilla extract
1. Preheat the oven to 340F. Place the cupcake liners into the cupcake pan (mine is medium size)
2. Cream the butter and the sugar together at a large bowl with an electric mixer on medium speed until fluffy. Add the eggs one by one to the mixture and beat well.
3. Sift together the flour, baking powder and salt.
4. Pour the dry ingredients into the creamed mixed, add in milk and mix it for 3-4 minutes. Fold in chocolate chips and vanilla.
5. Fill cupcake liners 1/2 to 2/3 full with batter. Bake for 25 mins or until toothpick inserted in the center comes out clean.
6. Cool the cupcake in pan.
For chocolate ganache:
3/4 cup of light whipping cream
1 cup of dark chocolate
1. In a saucepan bring the whipping cream just to a boil over high heat.
2. Pour the hot whipping cream over the chocolate and stir until the chocolate melted. Let it cool to room temperature.
3. Beat the ganache with an electric mixture at low speed until it turns thick and smooth. (Be careful not to overwhip the cream!)
